An Irish pizzeria has been named one of the top 100 in the world.
he Dough Bros in Galway, run by brothers Ronan and Eugene Greaney, was listed at number 79 in the 50 Top Pizza World Awards for 2022.
The awards were unveiled at a ceremony at the Palazzo Reale in Naples, with I Masanielli in Caserta, Italy and Una Pizza Napoletana in New York taking first place.
In their citation for The Dough Bros, the judges said that “the dough is made to perfection and the selection of raw materials is always of the highest quality.”
Pizzeria Galway was the only Irish eatery to make this year’s list and also ranked 27th in Europe.
“We have some of the best dairy, meat and vegetables in the world right here on our doorstep,” said Eugene Greaney.
“So why can’t there be one of the world’s best pizzerias right here in Galway on the west coast of Ireland? It sounded crazy, but that was our goal from day one and now we have seen it come to fruition.”
The 50 Top Pizza Awards are hosted by 50 Top Pizza, an online guide based in Italy.
The rankings are based on feedback from “inspectors” who anonymously visit pizzerias around the world, it said.
“This guide covers many different styles of pizza, although of course the Neapolitan style, both classic and modern, is the most popular.
“The most important cities in terms of quality for pizza are: above all Naples, then New York, Tokyo and São Paulo.”
In their citation, the judges noted how The Dough Bros had reconsidered its business strategy during the Covid-19 pandemic, offering DIY kits for delivery “to every corner of the country”.
The Greaney brothers first fell in love with pizza during childhood visits to Naples, and Ronan was training there in 2015. Her pizza business started in a food truck and is now in the Cathedral Buildings on Middle Street.
The Dough Bros uses neopolitan-style dough and wood-fired ovens with Irish food and creative key ingredients.
Toon’s Bridge Dairy Fior di Latte cheese, for example, is paired with San Marzano tomato sauce, and one pizza – the “Peter Stinger” – is branded as an “Irish Margerita” with Gubbeen chorizo and “a good dash of Noel’s Hot Honey.” denotes Co Galway under the toppings.
“We started with a mission to change people’s perceptions of what pizza could be like when made right,” says Eugene.
“When it’s prepared with craftsmanship, passion and the finest Irish ingredients. We wanted to shake up the Irish pizza scene, but also put Irish pizza on the international map.
“After our training in Naples in 2015 and numerous trips to Italy, the US and more, we had a quiet confidence in the Irish food scene and felt that what some of our colleagues were doing here at home, everything , which we had tried could match .
“We started to wonder why the best pizzerias in the world always have to be in Naples, New York, London?
“And now there’s Ireland and Galway.”
Before the pandemic, Ireland’s pizza scene was on the rise, chefs and restaurateurs traveled to explore their craft and wood-fired ovens were popping up across the country.
In 2020, both Dough Bros and Cirillo’s in Dublin made the list of the best pizzerias in Europe. Manifesto in Rathmines on the 2019 list.
